Edamame Salad & Honey Lime Dressing

If you are like me, life is busy - having a great go-to salad in the fridge is a life saver! You will love this simple edamame salad you can make ahead and enjoy all week! Of course, we encourage you to use fresh LOCAL honey and locally sourced, garden FRESH vegetables. The instructions are easy - just combine everything into a large mason jar, let sit overnight and enjoy! Yes, you can start eating it right away, but I have found the longer it sits, the better it gets. I've even added more vege's to the dressing as the week goes along and as long as I keep it in the fridge, using a clean utensil to scoop out each serving - it keeps up to 10 days! #Salad #Edamame #Honey #ScottFamilyFarm


Salad Ingredients:

2 c shelled edamame

2 c sweet corn kernels

1 red bell pepper

1/2 c chopped red onion

1/3 c chopped green onion

Fresh cilantro to taste


Dressing Ingredients:

3 TBS lime juice (~2 small limes)

1/4 c avocado oil (or extra light olive oil)

1 TBS red wine vinegar

1/4 c fresh cilantro leaves

2 tsp Scott Familiy Farm honey

1/2 tsp sea salt

1/8 tsp black pepper

1/8 tsp cumin


Note: you can add any bean or cherry tomato to this recipe - really, there is no limit to the fresh vege's that taste great in this dressing!
