Sauteed bacon and shallot in butter for 10 min on med-high heat... Add a cup of beef stock and 2 cups cubed butternut squash, cover - viola, you are done! Just simmer until easily spared with a fork and most broth is gone (~10min).
1/4c bacon pieces
1 shallot, sliced thin
3Tbl butter
1c beef stock
2c butternut squash, peeled & cubed
